Fenugreek has a strong aroma and is a common ingredient in curry powders such as madras.
Notes
- The aroma is the main thing about fenugreek, rather than the actual taste. On its own, the taste of fenugreek is bitter, but when mixed with the other spices in the curry, the fenugreek lifts the curry with a spicy aroma.
- This fenugreek powder is very strong, and you only need a small spoonful. Adding too much will make the curry bitter. You typically only need around 1 spoon of fenugreek for around 5 spoons of coriander.
- When cooking a curry, add the fenugreek right at the start, as it takes time for the fenugreek to release its flavours.
- Fenugreek is used particularly in the milder dishes, as it adds the curry flavour without the heat. So it is common in saag aloo, light pickles and flatbreads.
